Ingredients for 4 people
- 12oz spaghetti pasta
- 2lb zucchini
- 2 tbsp extra-virgin olive oil
- 1 clove garlic
- Mixed herbs
- Salt
- Pepper
INSTRUCTIONS
Wash the zucchini and cut off the ends. Cut them in half lengthways, then into small strips. In a deep frying pan, brown the clove of garlic in 2 tablespoonfuls of extra-virgin olive oil. Add the zucchini, a large pinch of mixed chopped herbs, then salt and pepper to taste. Cook until the zucchini shrivel up. Boil the pasta in salted water, drain, then add to the zucchini mixture. Toss for a few moments, making sure all the flavors get mixed together.
