    Ingredients:

    For the puff pastry:

    • 6 Eggs
    • 600 g of Flour - Molino Spadoni

    For the filling:

    Method:

    • First, cut the pumpkin into large pieces and bake it in the oven at 170° for about 30 minutes. Once cooked, remove the peel and, using a potato masher, place it in a bowl.
    • Add the Grana Padano, the crumbled amaretti biscuits, and the chopped mustard, season with nutmeg and salt. Mix the mixture well and let it rest for at least 8 hours.

    Let's prepare the pastry:

    • Pour the flour onto a pastry board with a hole in the center and pour the lightly beaten eggs into the center.
    • Knead by hand until it forms a loaf that we will leave to rest in the refrigerator for at least 30 minutes.
    • Once the resting time has elapsed, flatten the loaf and pass it through the pasta machine several times until you obtain a very thin sheet.
    • Cut it into strips about 7 centimeters wide and fill each square with the pumpkin mixture and close each tortello, making sure to seal it well with your hands.
