Ingredients:
For the puff pastry:
- 6 Eggs
- 600 g of Flour - Molino Spadoni
For the filling:
- 1 kg of Mantua pumpkin
- 500 g of Grana Padano - Virgilio
- 300 g of Macaroons
- 200 g of Mantua Mustard
- Salt - Collitali
- Nutmeg
Method:
- First, cut the pumpkin into large pieces and bake it in the oven at 170° for about 30 minutes. Once cooked, remove the peel and, using a potato masher, place it in a bowl.
- Add the Grana Padano, the crumbled amaretti biscuits, and the chopped mustard, season with nutmeg and salt. Mix the mixture well and let it rest for at least 8 hours.
Let's prepare the pastry:
- Pour the flour onto a pastry board with a hole in the center and pour the lightly beaten eggs into the center.
- Knead by hand until it forms a loaf that we will leave to rest in the refrigerator for at least 30 minutes.
- Once the resting time has elapsed, flatten the loaf and pass it through the pasta machine several times until you obtain a very thin sheet.
- Cut it into strips about 7 centimeters wide and fill each square with the pumpkin mixture and close each tortello, making sure to seal it well with your hands.
